Title: Mango, Cream Cheese and Salsa Tortilla Roll-Ups

1 Tortilla
2tbCream cheese
2slFresh mango
1tbSalsa*
1 Spig fresh cilantro [or sub
1tsDried parsley] optional
  A few drops of habanero sauce; optional

Mangoes were on special recently so we bought lots and started experimenting. Mangoes, cream cheese and salsa turned out to be a wonderful blend of flavours for a sandwich/snack. We tried sliced white bread and pitas but tortillas were the winners for this combo.

Sour cream or pressed yoghurt "cheese" can be subbed for cream cheese but isn't quite as good.

We tried fresh salsa, canned salsa, and a chopped tomato and onion relish. As I had no cilantro that day, I sprinkled the tomatoes with dried parsley and let the mixture sit for half an hour for the parsley to re-constitute itself in the tomato's juices before assembling the sandwich. Be sure and use chunky, meaty tomatoes that aren't too juicy eg: Italian plum tomatoes.

I added habanero sauce; Roslind didn't. All the different tomato/salsa variations were great.

Just skin and slice mangoes, smear a tortilla with cream cheese, load on mangoes and salsa, roll up and munch.
